Recipe for pizza crust

Here is my favorite recipe for home-made pizza crust. Although the original recipe is for cheese-stuffed crust, the dough can also be used for a plain crust or for making calzones.

Ingredients:
2 to 2-1/2 cups flour (bread flour works best)
1 pkg. (2-1/4 tsp.) quick-rise yeast
1 tsp. salt
1 cup water
2 Tbsp. oil
8-10 pieces of string cheese

Directions:
It’s easiest to make the dough in a bread machine. If you don’t have one, prepare a yeast dough from the ingredients. When dough is finished, roll out on a pizza pan, letting the edges hang over. Place string cheese around the edges, fold edges over, and pinch shut well. Prick dough all over with a fork several times (but not the crust part!). Bake in a pre-heated oven at 425 degrees for 10 minutes. Pull crust out, add toppings, and bake for another 10-15 minutes.

This makes enough dough for one very large pizza, or two medium-size pizzas.

The boys all agreed that the pizza came out great. Solomon even told me I was the best cook in the world!

Later today we made sugar cookies with fall-themed cookie cutters, and ate the dough until we all felt sick and were no longer hungry for dinner. Then we ate all the cookies that actually made it into the oven.

I have so many more goals for this week, and it’s already Thursday. Some of them are: get ready for ladies meeting on Saturday, get ready for chili cook-off after church on Wednesday night, finish up school work, translate two assignments that are due Monday morning, and design a new master schedule for chores, housework, etc.

  1. Isn’t it the best when your child says, “mommy your the best cook!” My heart melts when my kids say that to me. I make homemade pizza too and take out is just not the same. Plus the kids love to take part in making it. Cookie dough… yummy! We do that too!
